1c cake
flour = 1c all-purpose flour minus 2 TBS
1tsp baking powder = 1/4 tsp baking soda plus 1/2 tsp cream of tartar
1 envelope active dry yeast = 1 compressed yeast cake, crumbled
1 TBS cornstarch (for thickening) = 2 TBS all purpose flour
1c buttermilk = 1 TBS white vinegar or lemon juice stirred into 1c
milk -- stand 5 minutes
2 egg yolks (for thickening) = 1 whole egg
Juice of 1 lemon = 2 TBS bottled lemon juice

While baking
fruit pies, does the juice runneth over? Shake salt into the spills.
It'll burn into a crisp and can be easily scraped up with a spatula.
For a never fail, never weep meringue, add a teaspoon of cornstarch
to the sugar before beating it into the egg whites.
Once your meringue is baked, cut it cleanly, using a knife coated
with butter.
A meringue pie may be covered with waxed paper or plastic wrap with
no fear of sticking, if you'll first grease the paper with margarine.

Cream will
whip faster and better if you first chill the cream, bowl and beaters
well.
Soupy whipped cream can be saved by adding an egg white then chilling
thoroughly. Beat again for a fluffy surprise!
A few drops of lemon juice added to whipping cream helps it whip faster
and better.
Cream whipped ahead of time will not separate if you add 1/4 teaspoon
unflavored gelatin per cup of cream.
A dampened and folded dish towel placed under the bowl in which you
are whipping cream will keep the bowl from dancing all over the countertop.
Brown sugar won't harden if an apple slice is placed in the container.
If your brown sugar is already brick hard, put your cheese grater
to work and grate the amount you need.

margarine = 1/2 cup
1/4 lb butter = 1/2 cup
1/2 lb butter = 1 cup
3 tsp = 1 Tbs
2c liquid = 1 lb
2c shortening = 1 lb
4c flour = 1 lb
1 square chocolate = 1 oz.
4 TBS cocoa = 1 oz.
16 TBS = 1 cup (48 tsp)
4 TBS = 1/4 c
2 c = 1 pint
16 oz. = 1 lb

Drop a lettuce
leaf into a pot of homemade soup to absorb excess grease from the
top.
If time allows, the best method of removing fat is refrigeration until
the fat hardens. If you put a piece of waxed paper over the top of
the soup, it can be peeled right off, along with the hardened fat.
Ice cubes will also eliminate fat from soup and stew. Just drop a
few into the pot and stir; the fat will cling to the cubes. Discard
the cubes before they melt.
Perk up soggy lettuce by adding lemon juice to a bowl of cold water
and soak for an hour in the refrigerator.
Lettuce and celery keep longer if you store them in paper bags instead
of cellophane.
To remove the core from a head of lettuce, hit the core end once against
the counter sharply. The core will loosen and pull out easily.

2 pkgs dry yeast
1c sugar
1 tsp salt
1c shortening
3c very warm water
8c flour
1) Stir together shortening, sugar, salt and warm water.
2) Mix dry yeast with first 4 cups of flour.
3) Stir into shortening, sugar, salt and water mixture.
4) Mix or beat well, adding remaining 4 cups of flour.
5) In a large bowl, allow the dough to rise until double in size.
6) Knead the dough until smooth.
7) Make into your favorite shape and bake at 400 degrees for 12 to
15 minutes or until nice and brown.

Put 8 oz. can of undrained, crushed pineapple in a bowl.
Mix in 1 pkg. (4 serving size) instant pistachio pudding.
Add 1 cup miniature marshmallows, 1/2 cup nuts and 1 9-oz. carton
of thawed Cool Whip.
Refrigerate or enjoy immediately.

8 oz Pepperidge Farm Stuffing
2 large pans cornbread
2c chopped celery
1 or 2c chopped onions
4 cubes chicken bullion
49 oz can chicken broth
6 eggs
3/4 lb butter or margarine
Accent
Poultry Seasoning
Pepper
1) Cook the celery and onions in water with bouillon cubes.
2) Add the can of chicken broth and butter
3) When butter is melted, set aside.
4) In a large pan, crumble cornbread.
5) Add the Pepperidge Stuffing and mix well.
6) Pour warm liquid over mixture.
7) Add eggs and mix well.
8) Add seasoning, tasting as you go. (Dressing changes very little
in taste after cooking)
9) Spray pans with Pam.
10) Bake at 350 degrees for one hour or until brown.
(Makes 2 pans (11 3/4 by 9 1/2 by 1 1/2). Dressing freezes well raw
or cooked.)

6oz. chocolate chips (1/2 package)
2 tsp baking soda
1c coconut
2 tsp baking powder
1c pecans
1tsp salt
2c oatmeal
2c Post Toasties cereal
1) Mix and bake on greased cookie sheet 8 to 10 minutes in 350 degree
oven.
2) Let stand 1 minute before removing from pan.

1c flour
1/2c sugar
1/2c brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2c shortening
1 egg
1/2 tsp vanilla
3/4c quick cooking oats
1/4c walnuts
Granulated sugar for rolling.
1) Cream together: flour, sugar, brown sugar, shortening, egg and
vanilla.
2) Mix salt, soda and oatmeal; add to creamed mixture.
3) Beat well.
4) Stir in nuts.
5) Form into small balls.
6) Roll in the additional sugar.
7) Bake at 375 for 8 to 10 minutes.

12 oz. mini chocolate chips
1 1/2 c powdered sugar
1c peanut butter
1 large box Crispix cereal
1) Melt together margarine, chocolate chips and peanut butter until
smooth.
2) Pour over cereal and mix until well coated.
3) Sprinkle with powdered sugar or shake in large container.

Mac's Famous Ice Cream

4 eggs
2 and 1/4 c sugar
5c milk
4c heavy cream
4 and 1/2 tsp vanilla
1/2 tsp salt
1) Add sugar gradually to beaten eggs.
2) Continue to beat until mixture is very stiff.
3) Add remaining ingredients and mix thoroughly.
4) Pour into can and freeze as directed.

6 apples
1c sugar
1c flour
1/2c shortening or butter
1) Slice the apples into bottom of baking dish.
2) Add 3/4 c water.
3) Sprinkle with cinnamon, nutmeg or cloves.
4) Add 1/2 c sugar.
5) Mix together flour, shortening, and the rest of the sugar.
6) Crumble over apples.
7) Bake in moderate oven at 350 degrees or 375 degrees until apples
are done and crust is brown.
